It’s quick enough for a weekday treat, wholesome enough to count as fuel, and delicious enough that nobody will guess it’s healthy.
The blueberry chia compote can be made ahead and kept in the fridge, so you can be just 10 minutes away from a plate of deliciousness and it’s probably tempting enough that the kids will want to eat it too.

Ingredients
For the compote:
500g frozen blueberries
1 tbsp chia seeds
Honey or sugar of choice, to taste
Generous dollop of yoghurt
1 tsp nut butter of choice
For the toast:
1 large free-range egg
1 egg white
60ml semi-skimmed milk
1 tsp ground cinnamon
1 tsp honey or sugar of choice
1 tsp vanilla extract (optional)
1 slice bread (seeded or wholegrain)
Butter or oil, for cooking (optional)
Method
Make the compote: In a saucepan, cook frozen blueberries over a medium heat until they release their juices (about 5 mins). Stir in chia seeds and cook for 2–3 mins until thickened. Sweeten to taste. Let cool.
Prepare the toast: In a shallow bowl, whisk together egg, egg white, milk, cinnamon, honey/sugar, and vanilla (if using). Dip bread in mixture, flip, and soak 1 min each side.
Cook: Heat a non-stick pan over medium heat with a little butter/oil if needed. Cook soaked bread for 2–3 mins each side until golden.
Serve: Top French toast with 2 tbsp blueberry chia compote, yoghurt, and nut butter. Enjoy warm.
