m+plate: ELEANOR WILKINSON’S 10 minute GNOCCHI CON TOMATE

For those nights when you know you’ll be dining solo, post bath and bedtime when you don’t really have the energy to cook a whole meal for yourself, but also want something nourishing and healthy.

From One Pot, One Portion by Eleanor Wilkinson, this recipe takes a grand total of just 10 minutes to get on your plate.

It is a clever twist on pan con tomate but the crisp, golden gnocchi takes it from bar snack to proper meal, this is solo cooking without compromise.

Cook time: 5 mins
Serves: 1

Ingredients

  • 2 ripe vine tomatoes

  • 1 garlic clove, finely grated

  • Flaky sea salt

  • Extra virgin olive oil

  • 150g gnocchi

  • A few fresh basil leaves, torn if large

Method

  1. Grate the tomatoes into a shallow bowl, using the large holes of a box grater. Stop when you reach the skin—discard that.

  2. Stir in the garlic, a pinch of salt, and a generous glug of olive oil. Taste and adjust seasoning.

  3. Heat a frying pan over medium-high heat with a slick of olive oil. Add the gnocchi and fry for 4–5 minutes until golden and crisp.

  4. Season with a little salt.

  5. Spoon the tomato mixture over the hot gnocchi and scatter with basil to serve.

M+ Kid friendly tip: For another night when you need to quickly feed younger eaters, set aside some gnocchi before adding the raw tomato mixture and Just add a little olive oil and grated cheese instead.
