Nadiya Hussain’s quick Soba Chicken Noodles

Sometimes you need something easy, but also genuinely nourishing and restorative. This quick soba chicken noodle recipe from Nadiya Hussain’s Nadiya’s Quick Comforts delivers exactly that — a fresh alternative to the usual midweek rotation.

Built around an aromatic broth infused with citrus, warming spices and soy, it feels deeply comforting without requiring hours at the stove. Tender poached chicken and satisfying soba noodles make it equally suited to a relaxed weekend lunch or an easy family supper, while the bright flavours keep things light, energising and quietly revitalising.

It’s the kind of recipe worth keeping on repeat: quick, healthy, comforting and just different enough to reset the week.

Serves 4 | Prep 10 minutes | Cook 28 minutes | Total 38 minutes

Ingredients

  • 1 litre cold water

  • 4 chicken stock cubes

  • 1 clementine, halved

  • 1 large cinnamon stick

  • 1 star anise

  • 100ml soy sauce

  • 500g boneless chicken thighs, cut into strips

  • 250g soba noodles

  • 2 tsp ginger paste

  • 2 tsp garlic paste

  • 2 tsp chilli flakes

  • Fresh coriander, finely chopped

  • To serve

  • Lime wedges

Method

  1. Pour the cold water into a large pan and add the chicken stock cubes, halved clementine, cinnamon stick, star anise, soy sauce and chicken strips.

  2. Bring to the boil, then reduce to a simmer and cook for 15 minutes, allowing the broth to become fragrant and rich.

  3. Strain the contents through a colander set over a bowl, reserving all the liquid.

  4. Return the broth to the pan and discard the spices and citrus. Set the chicken aside.

  5. Add the soba noodles, ginger paste, garlic paste and chilli flakes to the broth. Bring back to the boil, then simmer until the noodles are cooked through.

  6. Return the chicken to the pan to warm through. Sprinkle generously with fresh coriander and serve with lime wedges for squeezing over just before eating.
