The Pineapple and Coconut Margarita We'll Be Sipping All Summer
Nothing says summer quite like a margarita, and this tropical twist on the classic might just become our new warm-weather favourite. Combining tequila, fresh lime, pineapple juice and creamy coconut, it delivers all the holiday energy of a beachside cocktail without needing a long-haul flight.
Served with a zesty lime and sea salt rim and finished with a fresh pineapple garnish, it's the sort of drink that works just as well for garden parties and BBQs as it does for a Friday evening in the sunshine.

Ingredients
For the cocktail
45ml blanco tequila
15ml triple sec
30ml fresh lime juice
30ml pineapple juice
15ml cream of coconut
Ice
1 pineapple slice, to garnish
For the rim
Sea salt
Finely grated lime zest
1 lime wedge
Method
Mix the sea salt and lime zest together in a shallow dish.
Run a lime wedge around half the rim of a rocks glass, then dip into the lime-salt mixture, tapping away any excess.
Fill a cocktail shaker with the tequila, triple sec, lime juice, pineapple juice and cream of coconut.
Add a generous handful of ice and shake vigorously until well chilled and slightly frothy.
Fill the prepared glass with fresh ice and strain the cocktail over the top.
Garnish with a pineapple slice and serve immediately.
