Zena Kamgaing's Harissa Butter Steak Flatbreads Are The 15-Minute Dinner You'll Make On Repeat

Thin-cut steaks are basted in smoky harissa butter before being layered onto warm flatbreads with garlicky Greek yoghurt and a fresh tomato and red onion salad. Ready in around 15 minutes, it's the sort of recipe that feels special enough for friends but easy enough for a Tuesday night.
Serves 4 | Ready in 15 minutes
Ingredients
150g Greek yoghurt
2 garlic cloves, finely grated or minced
1 small red onion, thinly sliced
Juice of 1 lemon
4 vine tomatoes (around 300g), cut into wedges
2 tbsp extra virgin olive oil
4 minute or thin-cut steaks
Vegetable oil (or any neutral oil)
1 heaped tbsp butter
½ tbsp harissa paste
4 small flatbreads
1 small handful fresh flat-leaf parsley, chopped
Sea salt and freshly ground black pepper
Method
Mix the Greek yoghurt with the garlic and a generous pinch of salt. Set aside.
In another bowl, massage the sliced red onion with the lemon juice and a pinch of salt until softened. Add the tomatoes and olive oil, toss together and leave to one side.
Heat a large frying pan over a high heat. Pat the steaks dry, lightly oil them and season well with salt and pepper. Cook for around one minute in total, turning halfway through.
Reduce the heat to medium. Add the butter and harissa paste to the pan and stir until melted. Spoon the harissa butter over the steaks for around 30 seconds before transferring them to a plate to rest for five minutes.
Meanwhile, warm the flatbreads according to the packet instructions and slice the rested steaks.
Spread the garlicky yoghurt over each warm flatbread, top with the steak slices and spoon over the buttery harissa juices. Finish with the tomato and onion salad, scatter over the parsley and serve any remaining salad alongside.
