Easy Homemade Frozen Treats for summer days
With temperatures climbing this week, we're keeping things simple with two easy frozen treats: one for grown-ups and one for little ones.
Requiring no ice cream machine and minimal effort, Nigella Lawson's no-churn matcha ice cream and Annabel Karmel's naturally sweet fruit lollies are the sort of make-ahead recipes you'll be grateful to have waiting in the freezer, whether you're cooling down after nursery pick-up, soothing sore gums or treating yourself once the children are finally asleep
For Grown-Ups: Nigella Lawson's No-Churn Matcha Ice Cream
Elegant bitterness meets condensed milk sweetness in this quietly sophisticated dessert, from Simply Nigella: Feel Good Food.
Serves 6–8 | Prep 10 minutes | Freeze overnight
Ingredients
150ml condensed milk (approximately half a tin)
300ml double cream
2 tbsp Izu Matcha green tea powder
Method
In a large bowl, stir the condensed milk to loosen it.
Add the cream and whisk until it begins to thicken.
Add the matcha powder and whisk again until fully combined into a soft, whipped green cream.
Transfer to a freezer-safe container and freeze overnight.
Remove from the freezer 10 minutes before serving to soften slightly.

Makes 6 lollies | Prep 5 minutes | Freeze 6 hours or overnight
Ingredients
50g cooked beetroot, peeled and diced
70g strawberries, chopped
50ml apple juice
Method
Add all the ingredients to a blender or jug.
Blend until completely smooth.
Pour into lolly moulds.
Freeze for at least 6 hours or overnight until fully set.
